Also called “Boca Negra” (Black Mouth), the Rose fish is a red skinned fish with very white meat, with a light and elegant flavour, ideal for cataplanas or fish soups. Try for the grilled Azores style option (preferably scaled), archipelago on which this species is very abundant.

Captured by trawls in the deep waters of the Algarve coast and the south-west of Portugal, the capture of the shrimp of Algarve is quite significant, making its prices very nice, considering its incredible sea taste. It is unmissable in snacks among family and friends – cooked in water and salt, raw or fried. The bigger sizes, that are quite rare, are great for grilling.

Da mesma família do Sargo, mas com a pele mais prateada, partilha os mesmos habitats e características – vive na rebentação das zonas costeiras e alimenta-se de mariscos. Em geral cresce menos que o Sargo, e tem uma carne muito delicada, branca e com um toque subtil a marisco. Surpreenda-se com este peixe, e cozinhe uma das receitas do Chef Bertílio Gomes: Safia com ovas de ouriço-do-mar, ervilhas tortas e esmagada de batata ou Salicórnia e algas com Safia na cataplana.
