The silver bream lives where the waves break at the beach, in coast areas, and therefore it is fished when there is white foam in the sea. You can find two types of Silver breams: silver bream in darker tones (black) who live in rocky areas, and the light toned silver breams (silver) that live in sandy zones. In both cases, its meat manifests very well the maritime terroir in which the fish inhabits: intense salt air from the waves breaking, iodine from the seaweeds and shellfish it eats. The outside looks of this fish are very similar to the John Dory, but its body is flatter and the meat is less white, what reflects on its more accessible price. It is delicious fried, grilled or in the oven.
From the family of the squalid (sharks), it is the favourite representative of the gastronomic community. Despite the existence of various squalid, like the Blue Shark, the Kitefin Shark or Gulper shark, it is important to make sure that you are buying Smooth-hound, because this is the recommended one.
